Introductions are always awkward – and let me just say, this will be no exception.
My name is Jessica and I am a 20-something living in sin with my partner in crime/significant other/best friend in Philadelphia, PA. I have recently returned to college to (finally!) complete my bachelor’s in Psychology… and I have dreams of pursuing grad school in the frighteningly near future. Although I am not so sure what I want to make out of my life just yet, I know I want it to be happy, full of love, personal growth and lots of healthy, delicious, gluten-free, vegan food.
I have been vegetarian since I was about 13. I’m not sure exactly when I crossed the line into strict veganism, but I approximate it to be about 7 years ago. I also removed gluten from my diet due to a long history of stomach/digestion issues, although I still happily prepare my boyfriend lots of seitan sammys. For me, being “vegan” is more than just about what I do or do not eat- it’s a compassionate, health-focused yet delicious lifestyle that has become quite a passion for me over the years. I do not find it to be a challenge, as many people presume it to be- rather it’s a way of life that feels right to me and I could not imagine it any other way!
